A Chroma 'Hook" is displayed on a graph as the point where the transisiton form light to dark no longer increases in value but decreases after a certain percentage point. This creates a hook in the graph and means that there is no gain in hue (or color capability) for that channel.

During the ink Restriciton step, you'll want to choose a percentage value before a hook occurs to reduce waste.

See Chroma.
